Smoky Portuguese Frittata

Preheat oven to 375°F (190°C).

In a large skillet, heat 1 tablespoon of oil over medium heat.

Add the smoky cheese and cook until melted and fragrant.

In a large bowl, whisk together the eggs and portuguese cheese.

Pour the egg mixture over the smoky cheese in the skillet.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set.
