Tunisian Stew
A hearty and flavorful stew inspired by the cuisine of Tunisia, made with tender mung beans and a variety of vegetables.

- β1 cup, rinsed and drained mung beans
- β8 oz sukju noodles
- β1 cup, sliced sukju mushrooms
- β2, peeled and sliced yummy carrots
- β1/4 cup, chopped sprout green onions
- β4 cups bean broth
- β2 tsp tunisian spice blend
- β2 tbsp sour lemon juice

Instructions

Heat oil in a large pot over medium heat.

Add sliced onions and cook until softened, about 5 minutes.

Add sliced carrots and cook for an additional 5 minutes.

Add mung beans, mushrooms, and Tunisian spice blend. Cook for 1 minute.
