French-Style Jamaican Pork Roast
A fusion dish that combines the flavors of Jamaica with the technique of a French roast.
Ingredients

- ●2 medium sweet potatoes
- ●2 tbsp jamaican jerk seasoning
- ●2 tbsp olive oil
- ●1 medium onion
- ●2 cloves garlic
- ●1 tbsp soy sauce
- ●1 tbsp brown sugar
- ●1 tbsp apple cider vinegar

Preheat oven to 400°F (200°C).

Season the pork roast with the jamaican jerk seasoning, making sure to coat it evenly.

Heat the olive oil in a large Dutch oven over medium-high heat.

Sear the pork roast for 2-3 minutes on each side, or until browned.

Remove the pork from the pot and set it aside.

Add the sliced onion to the pot and cook until it's softened and lightly browned.

Add the minced garlic and cook for an additional minute.

Add the sweet potatoes, soy sauce, brown sugar, and apple cider vinegar to the pot.

Return the pork roast to the pot and make sure it's coated with the sauce.
