Vegetarian Algerian Tagine
A flavorful and aromatic North African dish made with a variety of vegetables and spices, all slow-cooked in a traditional clay pot.
Ingredients
- β2 tablespoons algerian tagine spice blend
- β2 tablespoons zero-calorie oil
- β1 large diced onion
- β1 large diced bell pepper
- β4 medium chopped carrots
- β2 medium chopped zucchini
- β1 can chopped tomatoes
- β1 cup chicken broth
- β1/4 cup chopped fresh parsley
Instructions

Heat the zero-calorie oil in the bottom of a clay or ceramic tagine over medium heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the diced bell pepper and cook until tender, about 5 minutes.

Add the chopped carrots and zucchini, and cook for 5 minutes.

Add the chopped tomatoes, chicken broth, and algerian tagine spice blend.

Stir to combine, then bring the mixture to a simmer.

Reduce the heat to low and cook, covered, for 20-25 minutes, or until the vegetables are tender.
