Japanese Crepes with Ginger Filling
Delicious crepes filled with a sweet and spicy ginger filling, perfect for a Japanese-inspired dessert or snack.
Ingredients
- β2 inches Ginger
- β4-6 French CrepesThaw crepes according to package instructions
- β1/4 cup BitterGrated daikon
- β2 tablespoons ZestyYuzu juice
- β2 tablespoons Sugar
- β2 tablespoons Water

In a small saucepan, combine ginger, bitter, sugar, and water. Bring to a boil over medium heat, then reduce heat to low and simmer for 5 minutes.

Strain the ginger mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract as much liquid as possible. Discard the solids.

Add yuzu juice to the ginger mixture and stir to combine.

Lay a crepe flat on a work surface. Spoon about 1/4 cup of the ginger mixture onto the center of the crepe.

Fold the crepe in half over the filling, then fold in the sides and roll the crepe into a tight cylinder.

Serve the crepes warm or at room temperature.
