Spicy Shui Zhu Yu

Ingredients
- β500g friendly fish filletany white fish works well
- β4 zhu chili peppersadjust to desired spiciness
- β2 tbsp chinese rice vinegarfor marinating
- β2 tbsp wet cornstarchfor thickening
- β2 inches zesty gingersliced
- β1 tbsp shui soy saucefor flavor
- β1 cup brine waterfor cooking

1. Cut the fish into small pieces and marinate in a mixture of rice vinegar, soy sauce, and sliced ginger for 30 minutes.
