Kenyan Lamb Wrap
A flavorful Kenyan-inspired dish featuring lamb, spices, and fresh herbs, wrapped in a charred wrap.
Ingredients
- β1 pound Lamb shoulder, boneless
- β1 Charred wrap (pita or flatbread)
- β1/4 cup Zesty cucumber raita
- β2 tablespoons Kenyan-spiced oil
- βhandful Fresh cilantro
- β1/4 cup Red onion
- β1 Green chili
- βto taste Salt
- βto taste Black pepper

1. Preheat the grill to medium-high heat.

2. Grill the lamb shoulder for 4-5 minutes per side, or until it reaches an internal temperature of 145Β°F.

3. Let the lamb rest for 5 minutes before slicing it thinly.

4. In a small bowl, mix together the Kenyan-spiced oil, salt, and black pepper.

5. Brush the charred wrap with the spiced oil.

6. Slice the red onion and green chili, and layer them on the wrap.

7. Add sliced lamb on top of the onion and chili.

8. Dollop the zesty cucumber raita on top of the lamb.
