Thai-Style Shrimp and Vegetable Stir Fry
A quick and easy stir fry made with succulent shrimp and a variety of colorful vegetables, all in the flavors of Thailand.
Ingredients
- β1 pound Shrimppeeled and deveined
- β2 tablespoons ZestyThai chili sauce
- β1 cup Crispbell pepper, sliced
- β2 cups Thaimixed vegetables (e.g. carrots, snap peas)
- β2 tablespoons Somfish sauce
- β1 tablespoon TumThai basil, chopped
- β2 tablespoons Coconut oil
Instructions

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Add the shrimp and cook until pink and fully cooked, about 2-3 minutes per side.

Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of coconut oil.

Add the bell pepper and cook until tender, about 3-4 minutes.

Add the mixed vegetables and cook until tender, about 4-5 minutes.

In a small bowl, whisk together the Thai chili sauce, fish sauce, and chopped Thai basil.

Pour the sauce into the skillet and stir to combine.

Return the cooked shrimp to the skillet and stir to combine.

Serve the stir fry hot, garnished with additional Thai basil if desired.
