Argentinian Empanadas with Crispy Beans
A fusion of traditional Argentinian empanadas filled with crispy zesty beans, a delightful snack or side dish.
Ingredients
- β1 1/2 cups BeansBroad beans, canned or cooked from scratch
- β1/4 cup Zesty sauceHomemade or store-bought
- β1 package Empanada doughHomemade or store-bought
- β2 tbsp Olive oilFor brushing empanada dough
- βto taste SaltFor seasoning
- β1/4 cup Crispy breadcrumbsOptional topping
- β1/4 cup Shredded cheeseOptional topping
- β2 tbsp Chopped fresh cilantroOptional garnish
Instructions

Preheat oven to 375Β°F (190Β°C).

Cook broad beans according to package instructions.

In a pan, heat 1 tablespoon of olive oil over medium heat.

Add the cooked beans and zesty sauce, stir well.

Season with salt to taste.

Roll out empanada dough to a thickness of 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

Place a tablespoon of the bean mixture in the center of each dough circle.

Fold the dough over the filling, pressing the edges to seal.

Brush the tops with the remaining 1 tablespoon of olive oil.

Bake for 20-25 minutes, or until the empanadas are golden brown.
