Roast Beet Ukrainian Harvest Soup
A hearty and flavorful soup featuring roasted beets, crispy vegetables, and a hint of zesty flavor.
Ingredients

- ●1 medium onion
- ●2 medium carrots
- ●2 large potatoes
- ●2 tbsp zesty tomato paste
- ●1 lb ukrainian sausageoptional
- ●1/4 cup crispy fried onions
- ●4 cups vegetable broth
- ●2 cups water
- ●to taste salt
- ●to taste black pepper
Instructions

Preheat the oven to 425°F (220°C).

Wrap the beets in foil and roast for 45 minutes, or until tender.

Sauté the onion and carrots in a large pot over medium heat until softened.

Add the potatoes, zesty tomato paste, and vegetable broth to the pot. Stir to combine.

Add the roasted beets to the pot and stir to combine.

If using Ukrainian sausage, add it to the pot and cook until heated through.

Bring the soup to a simmer and cook for 20 minutes, or until the potatoes are tender.
