Portuguese Tagine Chicken Stew
A hearty and flavorful stew inspired by the flavors of Portugal, made with chicken, freekeh, and tagine spices.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β1 cup freekehcooked according to package instructions
- β2 tablespoons tagine spice blendavailable at most Middle Eastern markets or online
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons zesty lemon juicefreshly squeezed
- β1/4 cup crunchy chopped almondsoptional garnish

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Stir in the tagine spice blend and cook for 1 minute.

Add the freekeh and cook for 1-2 minutes.

Add the chicken broth and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the chicken is cooked through.

Stir in the zesty lemon juice and season with salt and pepper to taste.
