Pinakbet Chicken Breast
A Filipino-inspired dish that combines the flavors of pinakbet with the richness of chicken breast.
Ingredients
- β4 pieces Chicken breastBoneless and skinless
- β1 cup Pinakbetstore-bought or homemade
- β2 tablespoons ZestyFilipino-style vinegar
- β2 tablespoons Olive oilfor cooking
- βto taste Saltfor seasoning
- βto taste Black pepperfor seasoning
- β3 cloves Garlicminced

Preheat oven to 400Β°F (200Β°C).

Season the chicken breast with salt and black pepper.

Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breast until browned on both sides.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.

While the chicken is cooking, heat the zesty in a saucepan over medium heat.

Add the pinakbet to the saucepan and stir to combine. Bring the mixture to a simmer.

Once the chicken is cooked, remove it from the oven and let it rest for 5 minutes.
