Filipino-Style Menudo with Speck

- β1 medium Tomato
- β2 tablespoons Fish sauce

- β8 slices Speck

Heat oil in a large pan over medium heat.

Add the ground pork and cook until browned, breaking it up into small pieces as it cooks.

Add the menudo, onion, garlic, and tomato. Cook until the vegetables are softened.

Add the fish sauce, black pepper, and salt. Stir to combine.

Bring the mixture to a simmer and cook for 10-15 minutes, stirring occasionally.

While the menudo is cooking, fry the speck slices in a pan until crispy.
