Jamaican Jerk Chicken Fritters
A Caribbean-inspired snack with spicy jerk seasoning and crispy fried chicken fritters. Serve with a side of tangy mango salsa.

- ●2 tablespoons zesty jerk seasoning
- ●1 package fritters (store-bought or homemade)
- ●1/4 cup amaretti cookies (crushed)

- ●1 cup mango (diced)
- ●1/2 cup red onion (diced)
- ●2 tablespoons lime juice

Preheat the oil in a deep frying pan to 350°F (180°C).

In a large bowl, mix together the chicken, flour, jerk seasoning, and a pinch of salt.

Using your hands, shape the mixture into small balls and flatten them slightly into fritters.

Carefully place the fritters into the hot oil and fry for 3-4 minutes on each side, or until golden brown.

Using a slotted spoon, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

In a separate bowl, mix together the mango, red onion, lime juice, and crushed amaretti cookies.
