Moroccan Orange Tagine
A flavorful and aromatic North African-inspired stew, slow-cooked in a clay pot with the sweetness of oranges.
Ingredients
- β2 Egyptian oranges
- β2 inches zesty fresh ginger
- β2 tablespoons olive oil
- β1 medium onion
- β3 cloves garlic
- β1 teaspoon cinnamon
- β1 teaspoon cumin
- β1 teaspoon tagine spice blend
- β2 cups chicken or vegetable broth
- β2 tablespoons honey

Heat the oil in a large clay or ceramic tagine over medium heat.

Add the onion and cook, stirring occasionally, until softened, about 5 minutes.

Add the ginger, garlic, cinnamon, cumin, and tagine spice blend; cook, stirring constantly, for 1 minute.

Add the oranges, broth, and honey; bring to a boil.

Reduce the heat to low, cover, and simmer, stirring occasionally, for 20-25 minutes or until the flavors have melded together.
