Hearty German Bean Stew
A comforting and flavorful stew made with haricot beans, perfect for a chilly evening.
Ingredients
- β1 cup Haricot beans, dried
- β1 pound Zesty german sausage, slicedany type of sausage works, but zesty adds flavor
- β1 medium Onion, chopped
- β2 medium Carrots, peeled and chopped
- β2 medium Potatoes, peeled and chopped
- β2 tablespoons Tomato paste
- β4 cups Beef broth
- β Salt and pepper, to taste
- β1/4 cup Fresh parsley, choppedoptional garnish

In a large pot or Dutch oven, brown the sausage over medium-high heat.

Remove the sausage from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the chopped carrots and potatoes to the pot and cook for another 5 minutes.

Stir in the tomato paste and cook for 1 minute.

Add the beef broth to the pot and bring to a boil.

Return the sausage to the pot and add the dried haricot beans.

Reduce heat to low and simmer, covered, for 45 minutes or until the beans are tender.

Season with salt and pepper to taste.
