Filipino Lumpia Spring Rolls
A classic Filipino appetizer with a Chinese twist, these spring rolls are crispy on the outside and flavorful on the inside.
Ingredients
- β1 package (usually 20-24 wrappers) Lumpia wrappers
- β1 pound Ground pork
- β3 cloves Finely chopped garlic
- β2 Chopped zesty Filipino chilies
- β1/2 cup Glassy noodles

1. In a large pan, cook the ground pork over medium heat until browned, breaking it up into small pieces as it cooks.

2. Add the chopped garlic and cook for 1 minute.

3. Add the chopped chilies and cook for another minute.

4. Stir in the glassy noodles and cook until they are lightly browned.

5. Lay a lumpia wrapper on a flat surface with one corner pointing towards you.

6. Place about 1 tablespoon of the pork mixture in the center of the wrapper.

7. Brush the edges of the wrapper with a little water.

8. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

9. Repeat with the remaining wrappers and filling.

10. Heat about 1-2 inches of oil in a large frying pan over medium-high heat.

11. When the oil is hot, add a few of the spring rolls to the pan and fry until golden brown and crispy, about 2-3 minutes on each side.

12. Remove the spring rolls from the oil and place them on a paper towel-lined plate to drain any excess oil.
