Irish Stew with Peas and Zesty Twist
A hearty twist on a classic Irish stew, adding a burst of flavor with zesty peppers and a splash of peas.
Ingredients
- ●1 pound Irish stew beefcut into 1-inch cubes
- ●1 large Onionchopped
- ●1 cup Zesty peppersdiced
- ●1 cup Peasfresh or frozen
- ●2 large Potatoesdiced
- ●1 large Carrotsdiced
- ●2 tablespoons All-purpose flourfor dusting
- ●2 tablespoons Butterunsalted
- ●2 cups Beef brothlow sodium
- ●1 teaspoon Thymedried

Preheat oven to 300°F (150°C).

In a large Dutch oven, melt butter over medium-high heat. Add beef and cook until browned, about 5 minutes. Remove from heat and set aside.

Add more butter if needed, then sauté onion and zesty peppers until softened, about 5 minutes.

Add flour and stir for 1 minute.

Gradually stir in broth, scraping up browned bits from the bottom of the pot. Bring to a boil, then reduce heat to low and simmer.

Return beef to the pot and add potatoes, carrots, thyme, and peas.

Cover pot with a lid and transfer to preheated oven. Braise for 1 1/2 hours, or until beef is tender.

Season with salt and pepper to taste.
