Thai Braised Oxtail Curry
A flavorful and tender Thai-inspired oxtail curry made with zesty and aromatic spices.
Ingredients
- β1 pound oxtailcut into 2-inch pieces
- β2 tablespoons coconut oil
- β2 tablespoons zesty nam prik paste
- β1 tablespoon light brown sugar
- β1 tablespoon fish sauce
- β1 tablespoon dark soy sauce
- β2 kaffir lime leaveschopped
- β1/4 cup Thai basil leaveschopped

Preheat the oven to 300Β°F (150Β°C).

Heat the coconut oil in a large Dutch oven over medium-high heat.

Sear the oxtail until browned on all sides, about 5 minutes.

Remove the oxtail from the pot and set aside.

Add the nam prik paste to the pot and cook, stirring constantly, for 1 minute.

Add the brown sugar, fish sauce, and soy sauce to the pot and cook, stirring constantly, for 1 minute.

Return the oxtail to the pot and add the kaffir lime leaves and Thai basil leaves.

Cover the pot and transfer it to the preheated oven.

Braise the oxtail for 2 1/2 hours, or until tender and easily shreds with a fork.
