Roasted Mediterranean Chicken
A flavorful and aromatic dish that combines the best of the Mediterranean with the simplicity of roasted chicken.
Ingredients
- ●1 1/2 pounds chickenbone-in, skin-on
- ●2 tablespoons zestyolive oil
- ●2 tablespoons lemon juicefreshly squeezed
- ●3 cloves garlicminced
- ●1 teaspoon oreganodried
- ●1 teaspoon thymedried
- ●1 teaspoon saltkosher
- ●1/2 teaspoon pepperfreshly ground

Preheat oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, whisk together the zesty, lemon juice, garlic, oregano, thyme, salt, and pepper.

Brush the mixture evenly over the chicken, making sure to get some under the skin as well.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 45-50 minutes, or until it reaches an internal temperature of 165°F (74°C).
