Horchata Panna Cotta with Toasted Almonds
A creamy panna cotta dessert flavored with horchata and topped with toasted almonds and a zesty twist.
Ingredients
- β1 cup almondssliced and toasted
- β2 cups horchatastore-bought or homemade
- β1 tsp zestylime zest or orange zest
- β1 cup sugar
- β8 oz cream cheesesoftened
- β1 tsp vanilla extract

Preheat oven to 350Β°F (175Β°C).

In a small saucepan, heat the horchata over medium heat until warm.

In a blender or food processor, combine the warm horchata, cream cheese, and vanilla extract. Blend until smooth.

In a separate bowl, whisk together the sugar and lime zest.

Add the sugar mixture to the blender and blend until combined.

Pour the mixture into 4-6 ramekins or small baking dishes.

Place the ramekins in a large baking dish and add hot water to come halfway up the sides.

Bake for 25-30 minutes or until set.

Remove from the oven and let cool to room temperature.

Cover and refrigerate for at least 4 hours or overnight.

Just before serving, sprinkle toasted almonds on top of each panna cotta.

Serve chilled and garnish with additional lime zest if desired.
