Zesty Bean Tacos
A flavorful and healthy Mexican-inspired dish featuring zesty bean sprouts and crunchy tacos.
Ingredients
- β1 cup Mung bean sproutsFreshly rinsed
- β1 can (15 oz) Black beansDrained, rinsed
- β2 tsp Zesty taco seasoningHomemade or store-bought
- β6-8 Corn tortillasSoft tacos
- β1 cup Shredded lettuceFresh
- β1 cup Diced tomatoesFresh
- β1 Sliced avocadoOptional

Heat a large skillet over medium-high heat.

Add 1 tsp of oil and cook the mung bean sprouts for 2-3 minutes.

Add the black beans, zesty taco seasoning, and 1 cup of water to the skillet.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10-12 minutes.

Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by spooning the bean mixture onto a tortilla, followed by a spoonful of shredded lettuce, diced tomatoes, and sliced avocado (if using).
