Poached Kielbasa Tagine
A flavorful and hearty one-pot dish from North Africa, made with poached kielbasa and a variety of spices.
Ingredients
- β1 pound kielbasacut into 1-inch pieces
- β2 medium zestycut into 1-inch pieces
- β1 large canadiancut into 1-inch pieces
- β2 tablespoons tagineavailable in spice blends or individual spices
- β2 tablespoons olive oilfor cooking
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 teaspoon cuminground
- β1 teaspoon corianderground
- β1 teaspoon saltto taste
- β1/2 teaspoon black pepperto taste
Instructions

Heat the olive oil in a large Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the cumin, coriander, salt, and black pepper, and cook for 1 minute.

Add the kielbasa, zesty, and canadian to the pot, and cook until browned, about 5 minutes.

Add the tagine to the pot, and stir to combine.

Add enough water to the pot to cover the ingredients, and bring to a boil.

Reduce the heat to low, cover the pot, and simmer for 10-15 minutes, or until the kielbasa is cooked through.

Serve the tagine hot, garnished with chopped fresh herbs if desired.

Serve with crusty bread or over couscous for a filling meal.
