Portuguese Stew with Tofu
A hearty and flavorful stew made with tofu, inspired by the traditional Portuguese cuisine. Perfect for a cold winter's night.
Ingredients
- β1 block (14 oz) Tofupressed and drained
- β2 tsp Zesty Portuguese Stew Spice Blendavailable at most supermarkets
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 large Potatoesdiced
- β1 large Carrotspeeled and sliced
- β2 tbsp Tomato Pastehomemade or store-bought
- β1 cup Red Wineoptional
- β4 cups Vegetable Brothlow-sodium

Heat 2 tbsp of oil in a large Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the diced potatoes and sliced carrots, cook for 5 minutes.

Add the pressed tofu, zesty Portuguese stew spice blend, tomato paste, and red wine (if using). Stir to combine.

Pour in the vegetable broth and bring the stew to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the potatoes are tender.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh parsley or thyme, if desired.
