Jamaican Chicken Curry
A flavorful and spicy Jamaican-inspired chicken curry recipe made with a blend of aromatic spices.
Ingredients
- β1 pound boneless, skinless chicken breast or thighscut into 1-inch pieces
- β2 tablespoons Jamaican curry powderor to taste
- β1 teaspoon zesty yellow mustardor to taste
- β1 teaspoon roasted cuminground
- β1/4 cup curry leavesfresh or 1 teaspoon dried
- β1 medium onionchopped
- β2 cloves garlicminced
- β1-inch piece gingergrated
- β1/2 cup coconut milkcanned
- β1 cup chicken brothlow-sodium

Heat oil in a large skillet or Dutch oven over medium-high heat.

Add chicken and cook until browned, about 5-7 minutes.

Remove chicken and set aside.

Add onion, garlic, and ginger to the skillet and cook until softened, about 5 minutes.

Add curry powder, cumin, and mustard to the skillet and cook for 1 minute, stirring constantly.

Add coconut milk and chicken broth to the skillet and stir to combine.

Return chicken to the skillet and stir to coat with the curry sauce.
