Jamaican Tagine Roasted Vegetables
A flavorful and aromatic dish combining the warmth of Jamaican spices with the richness of roasted vegetables, all in a traditional North African tagine.

- β2 medium sweet potatoespeeled and chopped
- β2 medium red potatoespeeled and chopped
- β1 large onionschopped
- β2 tsp zesty jamaican seasoningstore-bought or homemade
- β2 tbsp olive oilfor brushing on vegetables
- β1 tsp tagine spice blendstore-bought or homemade
- β2 medium roasted red peppersdiced

Preheat the oven to 425Β°F (220Β°C).

In a large bowl, combine chopped carrots, sweet potatoes, red potatoes, and onions.

In a small bowl, mix together zesty Jamaican seasoning, tagine spice blend, and a pinch of salt.

Toss the spice mixture with the chopped vegetables until evenly coated.

Brush the vegetables with olive oil and transfer to a large baking dish.

Roast the vegetables in the preheated oven for 30 minutes.

After 30 minutes, add diced roasted red peppers to the baking dish.

Return the dish to the oven and continue roasting for an additional 15-20 minutes.
