Korean BBQ Beef Ssam
A flavorful Korean-inspired dish featuring marinated beef and crispy kimchi in a crispy rice wrapper.
Ingredients
- β1 pound beef (thinly sliced)preferably ribeye or sirloin
- β2 tablespoons ssamjang (Korean BBQ sauce)store-bought or homemade
- β2 cloves garlicminced
- β1 tablespoon gingergrated
- β1 tablespoon sesame oilfor brushing
- β4-6 large lettuce leavesfor wrapping
- β1 cup kimchistore-bought or homemade
- β2 tablespoons crushed toasted sesame seedsfor garnish
- β1/4 cup green onionthinly sliced, for garnish

Preheat grill to medium-high heat.

In a large bowl, whisk together ssamjang, garlic, ginger, and sesame oil.

Add the sliced beef to the marinade and toss to coat.

Grill the beef for 3-4 minutes per side, or until cooked to desired level of doneness.

Meanwhile, toast the rice wrappers on the grill or in a dry pan for 30 seconds.

Assemble the ssam by placing a lettuce leaf on a flat surface, followed by a slice of beef, a spoonful of kimchi, and a sprinkle of sesame seeds and green onion.

Fold the bottom half of the lettuce up over the filling, then fold in the sides and roll up the ssam to form a tight cylinder.

Note: For a vegetarian version, substitute the beef with marinated and grilled portobello mushrooms.
