Sichuan Lentil Stew
A hearty and flavorful stew made with lentils, sichuan peppercorns, and zesty vegetables.
Ingredients
- β1 cup lentilsgreen or brown lentils work well
- β2 tsp sichuan peppercorns Toast the peppercorns before grinding
- β1/4 cup zestyuse your favorite hot sauce
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 inches gingergrated
- β4 cups vegetable broth
- β1 can stew14.5 oz

1. In a small pan, toast the sichuan peppercorns over medium heat for 1-2 minutes.

2. Grind the peppercorns into a fine powder using a spice grinder or mortar and pestle.

3. In a large pot, heat 2 tbsp of oil over medium heat.

4. Add the chopped onion and cook until softened, about 5 minutes.

5. Add the minced garlic and grated ginger, cook for an additional 1-2 minutes.

6. Add the lentils, vegetable broth, and ground peppercorns to the pot.

7. Bring the stew to a boil, then reduce the heat to low and simmer for 20-25 minutes.

8. Stir in the zesty hot sauce and canned stew.

9. Season the stew with salt and pepper to taste.
