Smoked Haddock Pilaf
A classic Russian-inspired dish of smoked haddock, pilaf, and a hint of zesty flavor.
Ingredients
- ●4 smoked haddock fillets
- ●1 cup pilaf rice
- ●2 tablespoons zesty lemon juice
- ●1 medium chopped onion
- ●1/4 cup chopped fresh dill

Heat the olive oil in a large skillet over medium heat.

Add the chopped onion and sauté until softened, about 5 minutes.

Add the smoked haddock fillets and cook until opaque, about 3-4 minutes per side.

Remove the haddock from the skillet and set aside.

Add the pilaf rice to the skillet and cook, stirring constantly, for 2-3 minutes.

Add 2 cups of water to the skillet and bring to a boil.

Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked.

Flake the cooked haddock into the rice mixture and stir to combine.

Stir in the zesty lemon juice, chopped fresh dill, salt, and pepper.
