Eggplant Pasta Bake

Ingredients
- β1 large Eggplantsliced into 1/2-inch thick rounds
- β8 oz Pastashort, sturdy shape like penne or rigatoni
- β2 tbsp Zesty Italian Seasoningor to taste
- β3 tbsp Olive Oildivided
- βto taste Saltoptional
- β1 cup Grated Parmesan Cheeseoptional

Preheat oven to 400Β°F (200Β°C).

In a large skillet, heat 2 tbsp olive oil over medium-high heat.

Add sliced eggplant to the skillet and cook for 3-4 minutes per side, until tender and lightly browned.
