Vietnamese Spring Zesty Rolls
A refreshing spring roll recipe with a zesty twist, inspired by Vietnamese flavors. Perfect for a light and crispy snack or appetizer.
Ingredients
- β12-15 wrappers Spring roll wrappers
- β1 cup Rice noodles
- β1 cup Shredded carrot
- β1 cup Shredded cucumber
- β1/4 cup Zesty sauce
- β1/4 cup Chopped cilantro
- β1/2 cup Almond slices

Prepare the rice noodles according to package instructions. Drain and set aside.

In a large bowl, combine shredded carrot and cucumber.

Add chopped cilantro and zesty sauce to the bowl and mix well.

To assemble the spring rolls, lay a spring roll wrapper on a flat surface.

Place about 1 tablespoon of the noodle mixture in the center of the wrapper.

Fold the bottom half of the wrapper up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

Repeat with the remaining wrappers and filling.
