Venezuelan Chicken Skillet
A flavorful and spicy Venezuelan-inspired skillet dish made with chicken, zesty vegetables, and tender beef. Perfect for a quick weeknight dinner.
Ingredients
- β1 lb 1 lb boneless, skinless chicken breastcut into 1-inch pieces
- β1/2 cup 1/2 cup zesty diced tomatoesfresh or canned
- β1/4 cup 1/4 cup chopped venezuelan chorizooptional
- β1/2 cup 1/2 cup sliced red onionthinly sliced
- β1/2 cup 1/2 cup sliced bell pepperany color
- β1 tsp 1 tsp ground cuminor to taste
- β1/4 tsp 1/4 tsp cayenne pepperor to taste
- β salt and pepperto taste
- β2 tbsp 2 tbsp olive oilor other cooking oil
- β2 cloves 2 cloves garlicminced

Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

Add the chicken and cook until browned, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon olive oil to the skillet.

Add the onion, bell pepper, and garlic to the skillet.

Cook until the vegetables are tender, about 5 minutes.

Add the chorizo (if using), cumin, and cayenne pepper to the skillet.

Add the diced tomatoes to the skillet and stir to combine.
