Tunisian Vegetable Tagine
A flavorful and aromatic North African stew originating from Tunisia, typically made with meat or vegetables. This version is a vegetarian twist on the classic dish.
Ingredients
- ●2 tablespoons zest of 1 lemon
- ●2 tablespoons olive oil
- ●1 medium onion
- ●3 cloves garlic
- ●1 tablespoon tunisian vegetable tagine spice blend
- ●2 medium carrots
- ●2 medium potatoes
- ●1 can diced tomatoes
- ●1 can chickpeas
- ●2 cups water
Instructions

Heat the olive oil in the bottom of a clay or ceramic tagine over medium heat.

Add the onion and garlic and sauté until softened.

Add the tunisian vegetable tagine spice blend and sauté for 1 minute.

Add the carrots, potatoes, diced tomatoes, chickpeas, and water to the tagine.

Bring the stew to a boil, then reduce the heat to low and simmer for 30 minutes.
