Uruguayan Casserole
A hearty casserole originating from Uruguay, made with ground beef, tomatoes, and a hint of zesty flavor.
Ingredients
- β1 lb Ground beef80/20 lean to fat ratio
- β2 cups Plum tomatoeschopped
- β2 tbsp Tomato pastecanned
- β2 tbsp Olive oil
- β1 tsp Zesty seasoningUruguayan-style
- βto taste Salt
- βto taste Black pepper
- β2 cups Riceuncooked
- β1 cup Shredded cheddar

Preheat oven to 350Β°F (180Β°C).

Cook rice according to package instructions.

In a large pan, heat olive oil over medium-high heat.

Add ground beef, breaking it up with a spoon as it cooks.

Once browned, add tomato paste, zesty seasoning, salt, and black pepper. Stir to combine.

Add chopped plum tomatoes and stir to combine.

In a large mixing bowl, combine cooked rice, ground beef mixture, and shredded cheddar.

Transfer mixture to a 9x13 inch baking dish.
