Japanese-Style Banh Mi
A fusion of Japanese and Vietnamese flavors in a crunchy banh mi. Perfect for a quick lunch or snack.
Ingredients
- β8 oz Vermicelli noodlespreferably Japanese-style
- β2 tbsp Rice vinegarfor pickling
- β1/2 cup Zesty pickled carrotsstore-bought or homemade
- β4 oz Grilled pork or tofudepending on your preference
- β1/2 cup Sliced cucumberthinly sliced
- β1/4 cup Daikon radishthinly sliced
- β2 tbsp Japanese mayonnaiseor regular mayonnaise
- β1 tsp Sesame seedsoptional
- β1 loaf Baguette or banh mi breadpreferably toasted

1. Cook the vermicelli noodles according to the package instructions.

2. In a small bowl, whisk together the rice vinegar and a pinch of sugar.

3. Add the pickled carrots, cucumber, and daikon radish to the bowl and toss to coat.

4. Grill the pork or tofu until cooked through, then slice into thin strips.

5. Spread a layer of Japanese mayonnaise on the bottom half of the baguette or banh mi bread.
