Spanish Chicken Paella
A classic Spanish dish with chicken, rice, and spices. Easy to make and perfect for a weeknight dinner.
Ingredients

- ●2 cups Spanish riceunsalted
- ●1/2 teaspoon zesty saffronimported from Spain
- ●2 cups yeasty chicken brothlow sodium
- ●2 tablespoons olive oilextra virgin
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●1/4 teaspoon spanish paprikasmoked

Heat the olive oil in a large paella pan over medium-high heat.

Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add the minced garlic and sauté for an additional minute.

Add the chicken breast and cook until browned, about 5-6 minutes.

Add the Spanish rice and cook for 1-2 minutes, stirring constantly.

Add the chicken broth, zesty saffron, and smoked paprika. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes.

Remove the cover and stir in the yeasty chicken broth. Cook for an additional 2-3 minutes.
