Crispy Courgette Fritters
A delicious Mexican-inspired snack or side dish made with crispy courgette fritters.
Ingredients
- β1 medium CourgetteGrated
- β1 cup FriedCrispy breadcrumbs
- β1/2 teaspoon SpanishSmoked paprika
- βto taste Salt
- βto taste Pepper
- β1 Egg
- β1/4 cup Cheddar Cheese (optional)

1. Preheat the oil in a deep frying pan to 180Β°C (350Β°F).

2. In a bowl, mix together the grated courgette, crispy breadcrumbs, smoked paprika, salt, and pepper.

3. In a separate bowl, beat the egg.

4. Add the egg to the courgette mixture and mix well.

5. Using a spoon, drop small amounts of the mixture into the hot oil.

6. Fry for 2-3 minutes on each side, or until golden brown and crispy.

7. Remove the fritters from the oil and place on a paper towel to drain excess oil.

8. Serve hot, garnished with chopped fresh cilantro if desired.
