Crispy Spanish Fried Courgette
A crunchy and flavorful vegan dish made with courgette and a Spanish twist. Perfect as a side or main course.
Ingredients
- β2 medium-sized Courgette
- β1/4 cup Vegan oil
- βto taste Salt
- β1 tsp Smoked paprika
- β1 tsp Garlic powder
- β1/2 tsp Chili powder
- β2 tbsp Lemon juice

1. Slice the courgette into 1/4 inch thick rounds.

2. In a shallow dish, mix together the oil, salt, smoked paprika, garlic powder, and chili powder.

3. Add the courgette slices to the dish and toss to coat evenly.

4. Heat a non-stick pan over medium-high heat and add the courgette slices.

5. Cook for 3-4 minutes per side, until crispy and golden brown.

6. Remove the courgette from the pan and place on a paper towel-lined plate.
