Algerian Quinoa Tagine
A flavorful and nutritious North African-inspired dish made with quinoa, aromatic spices, and tender vegetables.
Ingredients
- β1 cup quinoarinsed and drained
- β2 tsp algerian spice blendavailable at most spice stores
- β2 tbsp aromatic oilsuch as olive or avocado oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β1 medium zucchinichopped
- β1 can diced tomatoes14 oz
- β2 cups watervegetable or chicken broth
- β1 tsp saltto taste
- β1/2 tsp pepperto taste

Heat the aromatic oil in a large saucepan over medium heat.

Add the chopped onion and sautΓ© for 5 minutes or until softened.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and zucchini and cook for 5 minutes or until tender.

Stir in the algerian spice blend, salt, and pepper.

Add the diced tomatoes and water to the saucepan.

Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.

Fluff the cooked quinoa with a fork and stir it into the saucepan.
