Guajillo Beer Braised Short Ribs
A rich and flavorful short ribs recipe with a hint of spice and a deep, malty beer flavor. Serve with a side of rice or noodles for a hearty meal.
Ingredients
- β2 pounds Short Ribs
- β4-6 dried chilies Guajillo chilies
- β1 medium Onion
- β3 cloves Garlic
- β1 cup Beer
- β2 tablespoons Tomato paste
- β2 cups Chicken broth
- β2 tablespoons Brown sugar
- β1 teaspoon Dried oregano
- βto taste Salt and pepper

Preheat oven to 300Β°F (150Β°C).

Season the short ribs with salt and pepper.

Heat a large Dutch oven over medium-high heat.

Sear the short ribs until browned on all sides, about 5 minutes per side.

Remove the ribs from the pot and set aside.

Add the onion and garlic to the pot and cook until softened, about 5 minutes.

Add the guajillo chilies, beer, tomato paste, chicken broth, brown sugar, and oregano to the pot.

Stir to combine, scraping up any browned bits from the bottom of the pot.

Return the short ribs to the pot and bring the liquid to a simmer.

Cover the pot with a lid and transfer it to the preheated oven.

Braise the ribs for 2 1/2 to 3 hours, or until tender and falling off the bone.
