Aerated Fried Rice
A twist on the classic Chinese dish, adding a touch of bitterness for depth of flavor.

Ingredients
- β2 cups Chinese ricepreferably day-old rice
- β1 cup bitter melonthinly sliced
- β1 cup aerated waterused to add lightness to the dish
- β1/4 cup fried shallotschopped
- β2 tbsp soy sauceoptional
- β1 tsp sesame oiloptional
- βto taste salt

Instructions

Heat 1 tablespoon of sesame oil in a wok or large skillet over medium-high heat.

Add the bitter melon and stir-fry for 2-3 minutes until slightly tender.

Add the Chinese rice and stir-fry for 2-3 minutes until heated through.

Add the aerated water and stir-fry for another minute until the rice is light and fluffy.

Add the fried shallots and stir-fry for another minute until well combined.
