Keto Eastern Toor Dal Stir Fry
A keto-friendly twist on the traditional Eastern Toor Dal dish, made with a flavorful stir fry
Ingredients
- β1 cup Toor Dalrinsed and drained
- β1 teaspoon Middle Eastern spicesavailable at most grocery stores
- β1 medium Bitter gourdchopped
- β2 tablespoons Olive oilfor stir frying
- β3 cloves Chewy garlicminced
- β1 inch piece Comforting gingergrated
- βto taste Saltketo-friendly salt
- βto taste Black pepperfreshly ground

Heat the olive oil in a large skillet or wok over medium-high heat.

Add the chopped bitter gourd and cook until tender, about 5 minutes.

Add the minced garlic and grated ginger and cook for 1 minute, until fragrant.

Add the Toor Dal, Middle Eastern spices, salt, and black pepper. Stir to combine.

Cook for an additional 2-3 minutes, until the flavors have melded together.

Serve hot, garnished with chopped fresh herbs if desired.

Note: Traditionally, Toor Dal is cooked with a significant amount of oil and ghee, but we've adapted this recipe to be keto-friendly by reducing the amount of oil and omitting the ghee.
