Thai Paella with Chewy Spanish Sausage
A unique fusion of Spanish and Thai flavors in a savory paella dish.
Ingredients
- β1 pound chewy spanish sausage
- β1 cup parmesan cheeseshaved
- β2 cups paella rice
- β2 tablespoons vegetable oil
- β1 large onion
- β3 cloves garlic
- β2 tablespoons lemon juice
- β2 tablespoons fish sauce
- β1 teaspoon chili flakes
- β1 tablespoon sugar
- βto taste salt
Instructions

Heat oil in a large paella pan over medium-high heat.

Add sausage and cook until browned, about 5 minutes.

Add onion and garlic and cook until softened, about 3 minutes.

Add rice and cook for 1-2 minutes, stirring constantly.

Add vegetable broth, fish sauce, lemon juice, chili flakes, and sugar. Bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes or until rice is cooked.

Stir in parmesan cheese and cook for an additional 2-3 minutes.

Note: Traditionally, paella is cooked over an open flame, which gives the rice a crispy crust at the bottom called the socarrat. If you have access to an outdoor grill or a stovetop with a large burner, you can achieve this same effect.
