Vegan Paella
A vegan twist on the classic Spanish dish, using plant-based ingredients for a satisfying and flavorful meal.
Ingredients
- ●1 cup chewy brown rice
- ●1 tsp spanish smoked paprika
- ●1/2 cup parmesan cheese alternative
- ●1 tsp paella seasoning
- ●1 can artichoke hearts
- ●1 can peeled and chopped tomatoes
- ●2 tbsp olive oil
- ●1 tsp garlic powder
Instructions

Heat the olive oil in a large paella pan over medium-high heat.

Add the garlic powder and sauté for 1 minute.

Add the paella seasoning and smoked paprika. Cook for 1 minute.

Add the artichoke hearts and chopped tomatoes. Cook for 2 minutes.

Add the brown rice and stir to coat with the oil and spice mixture.

Cook for 2-3 minutes.

Add 2 cups of water to the pan and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes or until the rice is tender.

Stir in the parmesan cheese alternative and cook for an additional 2 minutes.

Serve hot, garnished with additional parmesan cheese alternative if desired.
