Southern Fried Corn Cakes
A twist on a classic corn fritter, these fried corn cakes are crispy on the outside and fluffy on the inside.

Ingredients
- β1 cup Cornmeal
- β1/2 cup Crisps, crushed
- β1/2 cup Buttermilk
- β1 Egg
- β1/4 cup Pickles, finely chopped
- β1/2 tsp Salt
- β1/4 tsp Black pepper

In a large bowl, whisk together cornmeal, crushed crisps, salt, and pepper.

In a separate bowl, whisk together buttermilk and egg.

Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.

Fold in chopped pickles.

Heat about 1/2-inch of oil in a large skillet over medium-high heat.

Using a 1/4 cup measuring cup, scoop the batter into the hot oil.
