Avocado Mexican Crepes
Delicious and creamy crepes filled with a Mexican twist.
Ingredients
- β2 ripe avocados, mashed Avocado
- β1/2 cup crumble Crispy tortilla crumble
- β1 cup Creme mexicaine
- βto taste Salt
- βto taste Pepper
- β2 tablespoons Lime juice
- β2 eggs Eggs
- β1/2 cup Milk
- β1 tablespoon Sugar
- β1/4 teaspoon Cinnamon

1. In a bowl, whisk together eggs, milk, sugar, and cinnamon.

2. Add the flour and whisk until smooth.

3. Heat a small non-stick pan over medium heat.

4. Pour a small amount of the batter into the pan and tilt to evenly coat the bottom.

5. Cook for 1-2 minutes or until the edges start to curl.

6. Loosen with a spatula and flip.

7. Cook for another minute.

8. Repeat with the remaining batter.

9. In a separate pan, heat the creme mexicaine over low heat.

10. Add the mashed avocado and stir until combined.

11. Add the crispy tortilla crumble and stir until combined.

13. To assemble, place a crepe on a plate and spread a spoonful of the avocado mixture on top.
