Smoky Beef Stew
A hearty and flavorful stew from Venezuela, made with tender beef and a rich, smoky sauce.
Ingredients
- β1 pound beef stew meatcut into 1-inch cubes
- β2 smoky chipotle peppersin adobo sauce
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup creamy coconut milkfull-fat
- β2 tablespoons tomato pasteconcentrated
- β2 cups beef brothlow-sodium
- β1 teaspoon cuminground
- β1 teaspoon corianderground

Heat oil in a large Dutch oven over medium-high heat. Add beef and cook until browned, about 5 minutes.

Remove beef from pot and set aside. Add onion and garlic to pot and cook until softened, about 5 minutes.

Add chipotle peppers, cumin, and coriander to pot and cook for 1 minute.

Add tomato paste to pot and cook for 1 minute, stirring constantly.

Add beef broth to pot and bring to a boil. Scrape up any browned bits from bottom of pot.

Return beef to pot and bring to a simmer.

Reduce heat to low and cook, covered, until beef is tender, about 2 hours.

Stir in coconut milk and continue to cook for 10 minutes.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh cilantro if desired.
