Vegan German Gratin
A creamy, cheesy-free German-inspired gratin made with crispy vegetables and a variety of flavors.
Ingredients
- ●2 large Crispy German PotatoPeel and thinly slice
- ●1 cup Cured Vegan Meat (such as seitan)Slice into thin strips
- ●1 head CauliflowerBreak into florets
- ●1 cup Vegan Gratin Cheese (such as soy-based)Shredded
- ●2 cups Vegetable BrothHomemade or store-bought
- ●1 tsp Herbs (such as thyme and rosemary)
- ●2 tbsp Olive Oil

Preheat oven to 375°F (190°C).

Peel and thinly slice potatoes, then soak in cold water for 30 minutes.

Drain potatoes and pat dry with a paper towel.

Sauté sliced potatoes in a pan with 1 tablespoon olive oil until crispy.

Transfer potatoes to a baking dish.

Add sliced cured vegan meat, cauliflower florets, and shredded vegan gratin cheese to the baking dish.

Pour in vegetable broth and sprinkle with herbs.
