Peruvian Shrimp Ceviche

- β1 pound large shrimp, peeled and deveined Shrimp
- β1/2 cup freshly squeezed Lime juice
- β1/4 cup Crispy corn kernels
- β1/2 cup finely chopped Red onion
- β1/4 cup seeded and finely chopped Aji amarillo pepper
- β1/4 cup chopped Cilantro
- βto taste Salt

In a large bowl, combine the shrimp, lime juice, crispy corn kernels, red onion, and aji amarillo pepper.

Stir in the chopped cilantro and season with salt to taste.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
