Crispy Cod Stew
A hearty stew featuring crispy cod, inspired by traditional Portuguese flavors.
Ingredients
- β4 cod fillets
- β2 tablespoons olive oil
- β1 medium onion
- β3 cloves garlic
- β2 cups chicken broth
- β2 tablespoons tomato paste
- β2 large potatoes
- β2 medium carrots
- βto taste salt
- βto taste black pepper

1. Heat olive oil in a large pot over medium heat.

2. Add diced onion and cook until softened, about 5 minutes.

3. Add minced garlic and cook for an additional minute.

4. Add cod fillets and cook for 2-3 minutes on each side.

5. Add chicken broth, tomato paste, potatoes, and carrots. Bring to a boil.

6. Reduce heat to low and simmer for 10-12 minutes or until cod is cooked through.

7. Season with salt and black pepper to taste.

8. Serve hot, garnished with crispy cod topping (see below).

9. For crispy cod topping: Dip cod fillets in beaten eggs and then coat with breadcrumbs. Pan-fry until golden brown.
